When we started clean eating almost a month ago, I knew I would have to find a way to “clean up” my favorite cookie recipe.  I am a big cookie fan!  I’ve only made these twice in the last month, and would recommend you do the same….they are an occasional treat!

Clean Eating, Soft, Chocolate Chip Cookies

2 1/4 cups Whole Wheat Pastry Flour
1 tsp. baking soda
1 cup butter, softened
1 cup coconut sugar
1 tsp. cornstarch
2 eggs
1 tsp. vanilla extract
1 Tbs. raw honey
2 cups grain-sweetened chocolate chips
Preheat oven to 350 degrees.  Sift together flour and baking soda, set aside.

In a large bowl, cream together the butter and coconut sugar.  Beat in the cornstarch until blended.  Stir in the eggs, vanilla and honey.  Blend in the flour mixture.  Finally, stir in the chocolate chips.  Drop cookies by rounded spoonfuls onto ungreased cookie sheets.

Bake for 10-12 minutes in the preheated oven.  Edges should be golden brown.

I promise you will LOVE these cookies!  The secret is in the cornstarch.  Random, right?  It makes them so soft and chewy.  You would never know they were “clean”.  Happy cookie baking!
