We have been on a cracker kick around here.  If you read this post, you know my ninos love any type of cheesy cracker!

This recipe has become a staple for us.  I make up a batch on Sunday, and they {usually} last through the week.

Oh, and they are Delicious!!


2 cups whole-wheat pastry flour
10 Tbs. cold butter, cut into tablespoon size chunks
8 oz. or 3 cups grated cheddar cheese (sharp cheese makes better crackers!)


Preheat oven to 350 degrees F.

Combine all three ingredients in a food processor and blend. The mixture will eventually turn into one big ball chasing itself around the bowl. Be patient because it can take a few minutes.

Roll the ball into a log about 1 ½” in diameter (I wrapped mine in wax paper to refrigerate)

Refrigerate the dough for at least 20 mins.

With a sharp knife slice ¼” thick pieces off the log.

Place each one flat on a parchment lined cookie sheet.

Bake for 8 – 14 minutes or until golden brown. The thicker the crackers the longer it will take.

Makes around 72 crackers.  You can half the recipe if you just want to try it out!
