My kiddos LOVE snack time! It’s by far their favorite time of day.
Their favorite snack cracker, of course, is goldfish. I don’t think I’ve ever met a kid that didn’t like goldfish!
(miss J in her snack time “fairy costume”….she’s so crazy!)
After we started eating clean, goldfish were out! There’s nothing really that terrible in them, but they are full of refined flour, chemicals I can’t pronounce, and artificial dyes (in the “colors” goldfish).
So, we opted to make our own.
(don’t they look yummy?)
I must say, they taste 10 times better than the store bought ones!
{Clean Eating} Goldfish Crackers
Ingredients:
8 oz Sharp Cheddar Cheese, Shredded
4 Tbs Organic Butter, Cut Into Cubes
1 cup Whole Wheat Pastry Flour
¾ teaspoons Salt
2 Tablespoons Cold Water
Directions:
Pulse everything (except water) together in the food processor until the dough resembles coarse sand.
Pulse in water, 1 tablespoon at a time.
Remove dough from the processor, wrap in plastic, and chill for 20 minutes.
Roll out the dough and cut into desired shapes.
Place on a parchment paper lined cookie sheet.
Bake at 350 degrees for about 15 minutes, or until crispy.
Just a warning, these won’t last long! They were ALL gone in two days! My ninos loved them, and it was a fun way to spend an afternoon!
**tip: I made my own “goldfish” cracker cutter out of an old cookie cutter. I just bent it with a pair of pliers until it was a goldfish shape. Too much work? You can buy a mini goldfish shape cutter here.
