I sure have missed blogging this last week.  The stomach bug that visited our house was a DOOZY!

Mr. Clean is the MASTER pizza maker.  I’m not kidding.  He has perfected the art of making pizza.  I can honestly say it is better than any pizza at a restaurant!

Since we started eating clean, Mr. Clean has had to re-work his recipe a little.  What follows is a tried and true GREAT pizza dough!

Whole Wheat Pizza Dough

ingredients

1 1/2 cup warm (not hot) water
1 1/2 tsp yeast
2 Tbs raw honey
3 1/2 Tbs Extra Virgin Olive Oil
2 cups whole wheat pastry flour
1 cup white whole wheat flour
1 cup oat flour
5-6 tsp vital wheat gluten
1 1/2 tsp sea salt


directions

In a large mixing bowl, combine the water, yeast & honey.  Let sit for 5 minutes.

In a medium mixing bowl, whisk together the flours, vital wheat gluten, and salt.

Pour flour mixture and olive oil into the large mixing bowl that has the yeast/water/honey mixture.  Stir until the dough is not dry and not too sticky.

When the ingredients are well blended, knead dough on a lightly floured surface.  You want to knead about 5 minutes.  The dough should develop a good elasticity.  (this means it will “bounce” back if you poke it!)

Put dough in a large bowl (that has been sprayed with olive oil) and let rise, covered, for 2 hours.

Now you are ready to make a killer pizza!
